Embassy XO's Smoked Beef Pho - Chef Recipe by Sam Tapscott


Star Anise Broth:

1L chicken stock
4 star anise
2 tsp bonito
4 spring onion
6 slices of ginger
1 small piece of cassia bark (or cinnamon)
1 tsp orange zest
100 ml soy
60 ml Shaoxing (Chinese cooking wine)
80 ml mirin
40 ml sugar syrup
6 drops sesame oil
6 drops chilli oil
5 dried shiitake mushrooms


400 g beef fillet
120 g bean sprouts
80 g julienne Daikon
24 coriander leaves
4 bullet chilli sliced


Add all Star Anise Broth ingredients to a pot and bring to a simmer for ten minutes. Remove from heat, cover and allow to infuse for one hour. Strain through a fine strainer. Set aside.

In 4 bowls add the thinly sliced meat, bean sprouts, julienne daikon, coriander, chilli (or any vegetables you want as long as they are cut into small pieces), dividing the portions evenly.

Pour the hot Star Anise Broth over the meat and vegetables.
