3 Tbs pure maple syrup (preferably dark syrup for its robust taste)
1 1/2 cups mini vegan marshmallows
2 1/2 cups digestive or rich tea biscuits
300 g vegan chocolate
1/3 cup chopped peanuts or pretzels
1/2 cup (1 stick) vegan butter or margarine
Line a brownie tin?with parchment paper.
Crush up the biscuits into large pieces then set aside.
Melt the chocolate, maple syrup and vegan butter or margarine on low heat until smooth.
Transfer to a large bowl.
Add the crushed biscuits to the melted chocolate mixture, along with the peanuts or pretzels and marshmallows.
Mix well until coated in chocolate, then add the mixture to the tin.
Push and flatten with a metal spoon or spatula.
Refrigerate or ideally leave to set at room temperature for 3 hours at least.
Slice, serve?and enjoy!
