40mL Hendrick's Gin
20mL Messanese chilli liqueur
30mL clarified lime juice
20mL sugarcane syrup
Top up Soda water
Clarified Lime: Melt 3 grams of agar agar with 30mL of hot water to dilute, add 300mL of lime juice and mix well.
Let the lime juice sit in the fridge for half an hour and filter with coffee filter.
Put ingredients in the shaker and shake well to dilute, Pour the drink into a tall glass with ice and top it up with soda water.
