2 kg brushed potatoes, peeled, coarsely chopped
2 Tbs extra virgin olive oil
2 brown onions, thinly sliced
2 Tbs brown sugar
1 tbs balsamic vinegar
80 g butter, chopped
1/4 cup (60mL) milk
250 g green cabbage, cut into wedges
50 g coarsely grated tasty cheddar
Place the potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Cook for 20-25 minutes or until tender. Drain. Return to pan.
Meanwhile, heat the oil in a large frying pan over medium-low heat.
Add the onion and cook, stirring occasionally, for 10-12 minutes or until soft. Add the sugar and vinegar and cook, stirring, for 2-3 minutes or until onion caramelises.
Preheat oven to 220 C.
Add the butter and milk to potato. Use a potato masher or fork to mash until smooth. Season.
Spoon the potato mixture into a large baking dish. Top with remaining onion mixture. Sprinkle with cheddar. Bake for 20-25 minutes or until the cheddar melts and potato is golden.
