Surf and Turf - Recipe by Chef Aum
Angus beef sirloin and octopus confit, with basil and roasted chilli sauce.
30mL Arette Tequila (or any tequila on hand)
20mL lime juice
2 heaped Tbs of orange marmalade
5-10mL agave syrup (or any syrup on hand)
Orange zest slice to garnish
Salt - to garnish the rim of the glass if wanted.
Place all of the ingredients into a cocktail shaker filled with fresh ice.
Vigorously shake the mixture for at least 35 seconds, strain into a cocktail glass filled with fresh ice.
Garnish the cocktail with an orange zest slice and serve immediately.
