The Raffa of Raffa and the Fox refers to artful Melbourne Chef and co-owner Jay Raffaele of the brand new Albert Park restaurant and bar.
After completing his apprenticeship at Bistro Verdi in Mount Eliza, Jay furthered his experience at a number of fine Melbourne dining venues before
excelling in the kitchen of Woodman Estate on the Mornington Penninsula under the watchful eye of Executive Chef David Sarfaty.
“David completely revolutionised my approach to food. He taught me how to push the limits and really go for the wow factor.”
Foraging for mushrooms in the grounds of the estate became a favourite daily practice, as well as experimenting with different flavours and gaining
experience in a fast paced exacting kitchen, honing his skills to a level befitting a fine dining luxury venue. It's this experience he has utilised in his quest,
along with co-owner Christian Fox, to create a dining room and menu with the x factor.
