Situated on Leicester Street in Coorparoo, Ramona Trattoria welcomes you in true Italian spirit, as friends at the table. Here, dough is the language and everything begins with time, care and exceptional ingredients. Pasta is hand-shaped and cut daily using local, organic, pasture-fed eggs, with each shape chosen to perfectly cradle its sauce. Focaccia and pizza dough are naturally leavened and slow-fermented for at least 48 hours using a signature three-flour blend, creating flavourful, light and beautifully textured bases. Led by Chef Ashley-Maree, the kitchen honours Italy’s rich culinary traditions while adding a modern, seasonal touch. At Ramona, every plate is crafted with purpose and every bite tells a story.
