From a menu delivering pure flavours and textures, opt for entrées of hibachi grilled sumac-crusted quail, smoked white bean, tomato concasse, preserved lemon and pine nut, before White Pyrenees lamb loin, chermoula Beluga lentils, cavalo nero, smoked labneh and curry leaf oil. Perhaps spiced chickpea stuffed zucchini flowers entice, leaving room for torched steamed meringue, buttermilk, blood lime and wild strawberry.
