Szechuan Chilli Pork Congee - Chef Recipe by Sam Terronova
One of the signature dishes on the menu at West Footscray café Dumbo.
Szechuan chilli congee, with crispy pork belly, wild fungi, Chinese doughnut, spring onion, soft egg, furikake and chilli oil.
From a little old run-down milk bar on leafy Argyle Street in West Footscray, Dumbo has been transformed into the heart of the neighbourhood, where happiness is as simple as a leisurely breakfast. Extensive renovations to this iconic building have created an oasis of whitewashed brick, blond wood and trailing greenery, where escaping hustle and bustle to sip a latte and chill out is encouraged. A seasonal menu with daily specials and a range of takeaway items will appease hunger pangs as you delve into Japanese eggs, folded with prawns, okonomi sauce, Kewpie mayonnaise, furikake and bonito flakes on dirty rice. Perhaps smashed avo tempts, with feta and corn salsa; while sweet tooths opt for brioche soaked in Anglaise, caramelised apples, dulce de leche, ginger gelato and cinnamon meringue.
