Tortelloni with ricotta and spinach in butter and sage sauce are really fantastic, it is the first time that I try this dish here in australia, I have been in Italy in piedmont region and this dish was exactly like the locanda one. What a nice discover, integrity in the food, one of my guest ask for cheese in the seafood dish and the gentle waitress suggest not doing it, so to dont change the flavor of the dish. Frankly I am very pleased of such integrity.
