1 kg watermelon, peeled, coarsely chopped
2 slices watermelon
2 slices pineapple
500mL mango sorbet
1 1/2 cups (375mL) pineapple juice
2/3 cup (160mL) white coconut rum
1/4 cup (60mL) lime juice
Line a large baking tray with baking paper. Place chopped watermelon in a single layer on the lined tray. Place in the freezer for 2 hours or until frozen.
Use small star cutters to cut shapes from the watermelon slices and pineapple slices. Thread fruit stars onto small skewers.
Place frozen watermelon, sorbet, pineapple juice, rum and lime juice in a blender. Blend until smooth.
Pour the pina colada mix among serving glasses. Finish with fruit skewers to serve.
