Tom Yum Prawn Soup by Fusiopia


3 slices of lemongrass
3 slices galangal
3 kaffir lime leaves
4-5 large prawns
1-2 Tbs lime juice
2-3 Tbs fish sauce
5 mushrooms
2 fresh, chopped chillies (optional)
2-3 Tbs chilli paste
1/2 onion
1-2 tsp sugar
5-7 Tbs Carnation cooking milk
1 spring onion (optional)
1/2 tomato (optional)


Bring 450 ml water to boil in a saucepan on a medium heat. Add lemongrass, onion, galangal and kaffir lime leaves and boil for 30 seconds.

Add lime juice, fish sauce, chilli paste and sugar and combine. Add cooking milk, prawns and freshly chopped chilli and mushrooms.

Taste test and add more of any of the ingredients to your preference.

Pour into a bowl and serve.
