400 g penne
200 g snow peas, trimmed, halved diagonally
4 salmon portions skin off
150 g tub basil pesto dip
Basil leaves, to serve
Cook pasta in a large saucepan of boiling water following packet directions or until al dente, adding snow peas for the last 10 seconds of cooking. Drain, reserving 2/3 cup (160mL) cooking liquid. Return pasta mixture and cooking liquid to the pan.
Meanwhile, heat a large frying pan over high heat. Spray with olive oil spray. Add the salmon and cook for 2 minutes each side or until cooked to your liking. Transfer to a plate and set aside for 1 minute to rest. Use a fork to coarsely flake the salmon. Season.
Stir the salmon and dip into the pasta mixture. Divide among serving bowls. Sprinkle with basil to serve.
