Marshmallow Berry-Rose Martini - Recipe by Sigrid de Castella.


45mL Hangar 1 Rose Vodka
45mL housemade berry syrup
30mL fresh lemon juice
25mL Monin Toasted Marshmallow Syrup
8 drops Wonderfoam (vegan foaming agent)
Housemade berry syrup:
1 kg defrosted frozen mixed berries
60mL Cointreau
Icing sugar to taste
Dehydrated fresh raspberries


Housemade berry syrup:

Add Cointreau and icing sugar to defrosted raspberries. Drain and strain.

Dehydrated raspberries:

Place fresh raspberries into a commercial dehydrator.

Dehydrate for 24-48 hours until dry enough to blitz in a Thermomix until granular.


Add ice and soda water to a Martini glass to chill.

Add ice to cocktail shaker. Add all ingredients and shake vigorously for 60 seconds.

Empty Martini glass. Double strain the contents of the shaker into the glass – you should have foam that is at least 5mm thick.

Sprinkle with dehydrated raspberries to decorate.
