Black Truffle Fried Egg with Mushrooms and Creamy Blue Cheese
For that special weekend breakfast.
1.5 kg rock salt
500 g desiree potatoes
1 egg, beaten
1 egg white, beaten
170 g plain flour
Pre-heat the oven to 180C.
Sprinkle rock salt over a baking tray (enough to cover the tray) and place the potatoes on the top, bake for 1.5 to 2hrs, until cooked.
Cut the potatoes in half and scoop out the flesh and then pass the flesh through a food mill, into a bowl.
Add the flour, egg and egg white; add salt and pepper and mix together into a dough.
Roll out the dough and cut into little squares.
In a pot with salted boiling water, add the gnocchi until they come to the surface.
Remove the gnocchi and place into ice-cold water.
Enjoy with your favourite pasta sauce and toppings!
