Chilli-infused simple syrup:
2 cups water
1 cup sugar
4 red chillies, sliced in half from the stem down
150mL tequila (we suggest Arette Blanco)
150mL triple sec
150mL freshly squeezed lime juice
100mL chilli-infused simple syrup
3 cups shredded ice
4 limes, thinly sliced
To make the syrup, bring the ingredients to a boil and allow to bubble for 5 minutes until slightly thickened.
Remove from the heat and set aside to cool.
To make the margaritas, combine all the ingredients in a large jug and allow to stand for 10 minutes before serving with ice.
