1 cup (120 g) frozen pitted cherries
1/4 cup (55 g) caster sugar
1 tsp vanilla bean paste
1.2 kg chilled watermelon, peeled, chopped
1/2 cup (125mL) orange-flavoured liqueur
750mL bottle sparkling rosé, chilled
Watermelon wedges, to serve
Crushed ice, to serve
Bring the cherries, sugar, vanilla and 1/3 cup (80mL) water to a simmer in a saucepan over medium heat. Cook, stirring occasionally, for 2 minutes or until sugar dissolves. Cook, without stirring, for 3 minutes or until cherries are tender and syrup thickens. Set aside to cool.
Place cherry mixture in a blender and blend until smooth. Transfer to a jug and place in the fridge to chill.
Meanwhile, place the chopped watermelon in a clean blender and blend until smooth. Strain through a fine sieve into a large jug. Discard the solids. Place in the fridge to chill.
Divide cherry puree among serving glasses. Top with watermelon juice, liqueur and rosé. Serve with the watermelon wedges and ice.
