4 streaky bacon rashers
4 (about 150 g each) beef fillet steaks
100 g garlic butter
500 g cup mushrooms, thickly sliced
120 g baby spinach
Preheat oven to 220 C. Wrap 1 piece of bacon around the side of each steak and secure with toothpicks.
Heat a large non-stick frying pan over medium-high heat. Cook steaks for 1 minute each side or until browned all over. Transfer to a roasting pan. Bake for 6 minutes for medium-rare or until cooked to your liking. Cover with foil and set aside for 5 minutes to rest.
Meanwhile, melt the butter in a large frying pan over medium heat. Add the mushroom and cook, stirring, for 5 minutes or until browned and tender. Add the spinach and cook, stirring, for 1 minute or until spinach wilts. Season.
Remove toothpicks. Divide steaks among serving plates. Spoon over the mushroom mixture and pan juices.
