Free range Glass Mountain's chicken breast coated with leek ash, swede, onions, mushrooms, beach parsley, hay emulsion and parsley oil. Duck breast served pink with red cabbage, beetroot, charred onions, housemade bacon, cocoa crumbs, beach rocket and duck jus.
