Mark has been in Melbourne’s hospitality industry for over ten years, his passion for food starting when he was a child. No matter what restaurant he had been in Thailand, his first stop before the table is the kitchen where he ignites his passion for action, flame and heat before using them to create fabulous dishes.
Mark's cooking profession started soon after his degree in food science. He joined his first commercial kitchen in five-star hotel, Dusit Thani Hotel. Later, he moved to Melbourne for his professional qualification from William Angliss. During his study, he had an opportunity to work in a Japanese-Thai kitchen where he learnt to integrate the vibrantly tasteful flavours of Thailand into “Zen”sational Japanese dishes. Soon after he obtained his qualification, he joined crew at a busy café in South Yarra, where he was soon promoted to head chef, running a duo kitchen at Western & Thai for a few years. He now operates two restaurants, Narai Thai Balwyn and Lost Angel Bar & Restaurant
