On balmy Yarra Valley days, take to the alfresco deck with a glass of estate Riesling in hand and join friends for a lazy afternoon, or dine indoors in an elegant ambience of white-clothed tables and polished wood floors, to ponder menu choices to tempt all tastes. Perhaps start with entrées such as scallop crudo, palm heart coral, Nashi pear and avocado crème; before a memorable main of roasted pork Scotch, celeriac, artichokes, crispy sweetbreads and cider sauce. Finish with a divine dessert of dark chocolate delice, miso ganache, raspberry, soba char and milk chocolate gelato.

This dish embodies my cooking style and involves a number of processes and techniques but presents as quite a simple dish when plated. Many of the ingredients are from our garden or locally sourced.
This dish has been a part of my life for more than 10 years and has constantly evolved. The dish is based on a traditional crab dish served in Brazil. I was taught this dish by local cooks who worked for me while running Villa Dos Corias Restaurant in Morro de São Paulo.
