Silvester's Restaurant on Bulletin Place in Circular Quay has a unique story inspired by the rich history of the site on which the venue was built. In decades gone by, one of Sydney's finest butchers and providores, the Silvester Brothers served up local cuts on the corner of Pitt Street and Bulletin Lane. For more than 30 years, they were the early pioneers and purveyors of fine meats and produce of the highest quality and were well-known in the community. Today, Silvester’s restaurant and lounge pays homage to the Silvester Brothers, with a food philosophy focusing on simplicity, quality and thoughtfully prepared dishes; think starters like grilled prawns with salmoriglio and karkalla, before mains such as chicken with labneh, cress and sides of shoestring fries and charred broccolini.
