Ten years in Collingwood and Shu Restaurant on Johnston Street has never stopped evolving — a vibrant, plant-only Chinese kitchen and bar that continues to redefine what plant-based dining looks, tastes and feels like in Melbourne's inner north. Inspired by the bold, complex flavours of China's southwest Sichuan cuisine, Shu brings together a spacious industrial dining hall, an intimate cocktail bar and an eclectic atmosphere buzzing with good people energy and genuine culinary excitement. The signature ten-course vegan degustation is a breathtaking celebration of plant-based creativity — deconstructing the traditional Chinese banquet through dishes like Yu Xiang roasted eggplant, kohlrabi wrapped dumplings and preserved mustard greens with Asian herb butter.

I live and travel all over China and have extensive personal research on Sichuan food and this little rockstar restaurant produces, seriously, the best Sichuan fusion in Australia!!! You WILL NOT be disappointed with the food...

Just came here with overseas friends from switzerland, hongkong and japan, and the verdict was - perhaps the most amazing modern chinese everyone has ever tasted!! Shu has deconstructed traditional flavours then reconstructed them into food that is refreshing, clean and still capturing the essense of sichuan cuisine!!!! I would choose shu over spice temple, way more affordable and humble!!!
