SHIRA NUI — Preserving a Master's Legacy

For decades, Shira Nui has been one of Melbourne's most respected Japanese restaurants, known for its traditional sushi, intimate omakase experience and uncompromising craftsmanship.

At the heart of Shira Nui was the late sushi master Hiro Nishikura. With more than 40 years devoted to the art of sushi, Hiro built Shira Nui around patience, discipline and respect for tradition. Broadsheet described him as "one of Australia's true sushi masters."

Today, Hiro's legacy lives on through his protégé, Chef Yuki Ueno, now Head Chef of Shira Nui, carrying forward the techniques, craftsmanship and philosophy passed down by his master.

The connection to Hiro also remains deeply personal. His wife, Suzy, is still a familiar presence at Shira Nui, continuing to care for the restaurant they built together and welcoming guests in the same intimate dining room that has been part of Melbourne's Japanese dining landscape for decades.

Through Yuki's craftsmanship and Suzy's continued presence, Shira Nui remains closely connected to the spirit on which it was founded — preserving Hiro's legacy while allowing the tradition he devoted his life to to continue into the next generation.
