My kitchen at home has towers of books and magazines that I could sit and read with a cold beer.
Fish pie, with snapper, prawn, sorrel and lemon.
You know the scene at Republica in St Kilda even if you haven’t been there; its design and setup is testament to the cool chic Melbourne lifestyle that is all about keeping it fun, fresh and funky. Found in the Sea Baths complex overlooking Port Phillip Bay, this venue ticks all the boxes - the ideal place for people watching and serving great food every day of the week. The restaurant menu may include dishes like mac ‘n’ cheese croquettes with goats’ cheddar, as well as potato and ricotta gnocchi, sauteed greens and nettle butter; or pick up a slice of gourmet pizza like polpetti – meatballs, mozzarella, pickled onion and chives. Perhaps fish and chips with tartar and herb salad appeals, while for a decadent dessert, opt for dark chocolate mousse, hazelnut and caramelised white chocolate.
Escape somewhere special where the sea sparkles, eyes shine and glasses clink, such is life at Republica; a place of social eating and fun.
Republica is located in the St Kilda Sea Baths, right off St Kilda beach with views overlooking Port Phillip Bay. For your ultimate enjoyment and relaxation jump on the Number 96 and 16 trams which go past the venue.
INSPIRATION FROM THE KITCHEN
Ever since the oceans became the people's mode of transport, the spice trade has characterised the main routes of commerce throughout the world. Spices were used for food, currency, religion and medicine. It's no surprise spice has a huge influence in the gregarious share plate eating that is prevalent in the sea ports of all the spice routes in Asia, Europe, Africa and the America's. Their menu is designed to be a tribute to this food style, with drinks and music to match. Of course you can have a plate to yourself too. Catering for all tastes, budgets and palates the menu is sure to have something to entice you.
There's plenty plenty more to choose from if you prefer something lighter or even bigger! Chef Matt Dawson's Inspired Seafood Tasting Plate for two is a culinary masterpeice of delicious flavours and textures.
