Nestled on the Mornington Peninsula, the team produces their own grape-based spirit from scratch, forming the foundation of a refined range of vine-to-bottle gins, brandies, spirits and liqueurs. Nestled on the Mornington Peninsula, Bass & Flinders Distillery was founded in 2009 with a desire to take a grape-to-glass approach to distilling, transforming premium Victorian wine into expressive, locally inspired spirits. Family owned and operated, Bass & Flinders continues a hands-on approach to distilling, guided by heritage, craftsmanship, and care.
Bass & Flinders Distillery stands apart as one of Australia's few true grape-to-glass producers - where every spirit begins with premium Victorian wine grapes - not grain, nor neutral ethanol - a rare approach in Australia, making every bottle truly distinctive. Victorian wine is distilled in small batches using the traditional Charentais method, their spirits are smooth, rich and each drop reveals an elegance and depth that speaks to its origins. Drawing on artisanal craftsmanship, seasonal native botanicals and locally sourced ingredients, Bass and Flinders captures the vibrant flavours of Australia's landscapes in every sip.
This ode to their local surroundings carries through to their seasonal food menu, shaped by close partnerships with Mornington Peninsula producers, cheesemakers, and growers. These relationships inspire a rotating selection of shared plates and grazing boards, designed to showcase regional produce at its best.
