1 quantity of pizza dough to suit
28cm (11inch) pizza tray (thinner
Drizzle of extra virgin macadamia oil
Generous handful of good quality
shredded mozzarella cheese
Small handful of good quality
Handful fresh wild rocket
Shaved fresh parmesan cheese
8 slices thinly shaved high grade
1 fresh fig quartered
Oil base of pizza tray and spread
pizza dough evenly across the base
of a 28cm (11inch) pizza tray.
Drizzle macadamia oil on top of
base. Spread mozzarella evenly
across dough and top with crumbled
Cook in oven until cheeses are
melted and base is golden brown.
Remove from oven and garnish with
rocket, shaved parmesan, prosciutto
and quartered figs.
