Seasonal Bircher Muesli



Ingredients

2-1/3 cups organic rolled oats
1-3/4 cups low-fat milk
1 Green apple
1 tbsp organic honey
2/3 cup vanilla bean yogurt
Apple juice to taste (50mls)
1/4 cup Dried Fig
1/4 cup dried mixed fruit
1/4 cup toasted coconut treads

To Garnish:

1/2 cup Fresh berries
1/4 cup Toasted Almonds

Method

Place the rolled oats in a med bowl. Pour in milk, enough to moisten. Add the dried fruit and stir through.

Slice the dried figs into nice bite size pieces, along with your selected mixed dried fruit. Hint - Make sure any dried fruit you add are small petite pieces. I use a dried Pineapple, dried Paw Paw, dried Pear, and dried Mango slivers for a summer muesli. For a deep winter I might add Sultanas, dried apple and dried apricots.

Cover and place it in the fridge overnight.

On the morning you need your Muesli, coarsely grate the apple, with skin on over the oats. Discard the core and seeds.

In an open non oiled fry pan lightly toast some slivered Almonds, set aside to cool. Once cooled add them to the mix. Hint - Keep some back to garnish the muesli.

In the same open non oiled fry pan lightly toast some coconut treads, set aside to cool. Once cooled add them to the mix. Hint - Again keep some back to garnish the muesli.

Stir in the organic honey. Hint - Try to keep a neutral flavour honey (I used leatherwood style).

Add the plain yoghurt. Add a little 10% cloudy apple juice or a little more milk to relax the mixture if it is too thick.

Lightly stir the mix together again just prior to serving.

Serve topped with fresh berries and toasted almonds. Hint - You can serve it with a little light milk as well so if your guests want to relax the Muesli a little they can.
