There's nowhere to hide with a dry martini, with just gin, vermouth and a garnish.
50mL Underground Shiraz and Pepperberry Gin
50mL cloudy apple cider
25mL fresh lemon juice
25mL simple thyme syrup (made from sugar, water and thyme leaves)
2 fresh figs
Chill your cocktail glass.
In a cocktail shaker, muddle figs with the lemon juice.
Add a handful of ice, thyme syrup and Shiraz Gin. Shake well for 20 seconds.
Strain into a cocktail glass and top with cider. Garnish with a slice of fig and sprig of thyme.
