Middle Eastern Beef and Hummus Wraps



Ingredients

2 tsp ground cumin
1 tsp grated lemon rind
1 Tbs olive oil
1/2 tsp cracked black pepper
500 g beef Scotch fillet steak
200 g pumpkin and harissa hummus
4 large pita bread
60 g baby rocket leaves
200 g punnet Perino tomatoes, sliced
1 Lebanese cucumber, seeded, sliced
1 red onion, thinly sliced
1/3 cup (95 g) Greek yoghurt
1/4 cup mint leaves
Grated lemon rind, extra, to serve
Oven-baked chips, to serve

Method

Combine cumin, lemon rind, oil and pepper in a large bowl. Season with salt. Add beef and turn to coat.

Heat a chargrill or frying pan over medium-high heat. Cook for 2 minutes each side or until cooked to your liking. Transfer to a heatproof plate. Cover and set aside for 5 minutes to rest. Thinly slice.

Spread the hummus over pita bread. Top with rocket, tomato, cucumber, onion, beef, yoghurt, mint leaves and extra lemon rind. Serve with chips.
