Mango, Macadamia and Avocado Salad

Ingredients

3 bacon rashers, finely chopped
1 Tbs honey
2 tsp Dijon mustard
2 Tbs olive oil
2 Tbs apple cider vinegar
2 baby cos lettuces, leaves separated
1 mango, stoned, peeled, thinly sliced
1 avocado, stoned, peeled, thinly sliced
1/2 red onion, thinly sliced
1/3 cup (45 g) macadamias, toasted, coarsely chopped

Method

Heat a frying pan over medium-high heat. Add the bacon and cook, stirring, for 4-5 minutes or until crisp. Transfer to a plate lined with a paper towel.

Place the honey, mustard, oil and vinegar in a screw-top jar. Shake until well combined. Season.

Arrange the lettuce, mango, avocado, onion and macadamia on a serving platter. Sprinkle with bacon. Drizzle with dressing to serve.
