1/2 cup unsalted butter
1/2 cup Lakanto Monkfruit Golden sweetener
1 whole egg
2 cups gluten-free self-raising flour
1 tsp bicarb soda
Chopped Easter eggs, no-added sugar chocolate, nuts or any other ingredient you fancy
Preheat oven to 160 C fan-forced (180 C no fan).
Mix all dry ingredients together in a bowl.
In another bowl, mix butter and sweetener until soft. Add dry ingredients and mix until a breadcrumb consistency is reached.
Add whisked egg, mix until a loose dough forms. Fold through Easter eggs, chocolate or ingredient of choice.
Roll dough into 12 even balls. Place on a non-stick tray and bake for approximately 20 minutes, until golden.
Allow to cool before serving.
