Follow the locals along Gordon Street in Maribyrnong to trendy eatery, Imbue Food & Wine. An ambient and modern atmosphere awaits with exposed pendent lighting, bold monotone newspaper artworks adorning the walls and intimate communal seating, inviting patrons to stay for hours chatting over a bottle of local Victorian wine. Imbue has created a menu which changes every three weeks to highlight the freshest produce available at the local markets, served as tapas so the whole table can indulge in a plethora of dishes to their liking. Options may include the likes of roasted pork belly, green papaya salad, coriander and a chilli jus; or the fried chicken with sticky fish sauce. Be sure to save room for a decadent dessert of cannoli, chocolate mousse, almonds, crème fraiche and sour cherries.

my experiences at imbue food and wine have been outstanding the few times i have been and i look forward to going back many more times in the future. the service was excellent and something you could only expect from the finest of dining experinces with wine to match! the food was absolutely astuounding, starting with the whipped fetta is a must and the steak is always a tough choice when the raw tuna is on the menu.
Best in the West
What a welcome culinary addition to the Maribyrnong streetscape. The menu is based on superb ingredients and designed with brilliant creativity. Not to mention the combination of harmonious flavours. Staff provide a warm and friendly ambience. Presently the wine list is needing a little work, but many seem to prefer the array of cocktails on offer. Whatever food is on the menu or specials of the day here, it tastes wonderful. The chef is a genius at offering beautifully presented food with delightful taste combinations. A favourite.
Finally - Fine dining in the west!!
Every experience at Imbue has been quite a delight! The staff are always attentive and helpful in selecting the perfect dishes for the occasion. Great to have these small gems opening up in the west giving people the chance to enjoy the fine dining experience. Servings are quite generous and affordable than the usual fine dining. Each dish was an explosion of flavours! Amazing how they fit so much well balanced flavours into a bite size. The tapas style entrées stood out the most especially the blood sausage with the sunny side egg, would recommend as a “must try!". Everything was amazing including drinks, service and atmosphere. Slipped into a pleasant and satisfying food coma afterwards. Highly recommend :)
