Originally from Bristol, Charles James is the latest face to grace the kitchen of Henry & the Fox, appointed as head chef of the Melbourne city venture.

Starting work in the industry in the United Kingdom, Charles worked as a sous chef for Jamie's Italian Kitchen in Bath before trekking to New Zealand to work in Ohakune at Kings Hotel.  Since relocating to Australia, Charles has been an indispensable team member of Henry & the Fox, his refreshing creativity already placing a stamp on the menu.

With an interest in fresh pasta, butchery and fish, Charles' contemporary mix of international dishes include the British inspired Welsh rarebit, a beautifully flavoured asparagus risotto and a chicken, peperonata and truffle polenta dish.
