330g dates, pitted and diced
1 cup boiling water
2 tsp bicarb
200g plain flour
2 tsp baking powder
100g unsalted butter, super soft
2 eggs
50g brown sugar
Caramel sauce:
400g thickened cream
200g dark brown sugar
70g unsalted butter
2 tsp vanilla
Combine all the ingredients and dates together and mix until cohesive.
Pour into your pudding dish and bake at 160 C (Sarah uses the intensive bake function on her Belling oven, which cooks the pudding in 15 minutes). If you don't have a standard oven, just check at the 15-minute mark, as you'll be pretty close.
For the sauce, combine ingredients into a saucepan and bring to the boil. Pour half the sauce over the hot pudding, reserving the other half to serve.
