North Bondi Fish Curry
A simple fish curry to celebrate Matt Moran's restaurant, North Bondi Fish.
30mL KiNoBi Kyoto Dry Gin
30mL Kumano Umeshu Brandy
30mL Jasmine Tea
5mL Yuzu juice
5mL Shiso bitter
Small dash of honey
Prepare a cup of jasmine tea and leave to cool.
Combine all ingredients (gin, brandy, yuzu juice and jasmine tea) in a shaker with ice.
Add a dash of shiso bitters and honey.
Shake thoroughly and double strain.
Serve with large ice cube and add garnish.
