Day trippers from Melbourne and travellers on the Great Ocean Road circuit now have an even better reason to stop enroute in this Victorian town, as it's home to Fusion Restaurant Colac. Nestled on tree-lined Murray Street, this intimate restaurant offers modern Australian fine dining with views of Memorial Square and an alfresco option during nice weather. Everything on Fusion Restaurant's ever changing menu is sourced or grown as near and fresh as possible, so you can always anticipate herbs and veggies from the chef’s own garden. Seasonal options could include Grilled swordfish served with crisp polenta wedge, vegetable garden ratatouille & salsa verde or Sticky quince cake served with candied orange, saffron anglaise & pistachio cream.

To Michelle, Kieley and myself Fusion represents the blend of a love of good food, people to share it with and having a good time - you are always welcome at Fusion Restaurant Colac.

Cooking for me starts well before I enter the kitchen. For as long as I can remember I have always had some sort of vegetable garden or even just herbs in pots depending on where I have lived.

My passion for food really began with myself and my brother Justin when we had a great time cooking for our Mum and Dad, using as much as we could from the farm or the garden.

Even after formal training and endless hours of working in various kitchens nothing quite satisfies like providing the ones you love with a great meal.

Our menu changes all the time by a couple of dishes; the roll over occurs every 2 or 3 weeks. We are not reinventing the wheel, simply delivering well cooked food on the plate.

Where possible everything is sourced or grown as close to home as possible; Colac is so lucky that within a very close distance we have cheese, olives, shiitakes, beef, lamb, seafood, otway pork, berries, honey, and much more.

I grow all herbs and as much veg on the menu as possible and have a great group of friends that all grow veggies as well; when fruit trees are happening we all share between us.

Our wine list is compiled of local and Australian wines, with 5 sparkling, 14 whites, 16 reds and 4 dessert/fortified. There's something to please everyone.

We love the food at Fusion Restaurant Colac. It's great to have a venue that provides and alternatives to "pub style" menus and somewhere that regularly changes their menu. The atmosphere is intimate without being pretentious and you can tell how much love (I know it's cheesey) is put into the food.

Fusion satisfies all your senses! The moment you walk in you are greeted by a tastefully decorated space which includes an impressive wine display. The staffs were friendly and helpful when explaining the dishes of the 3 very generously proportion courses that took our taste buds on an amazing journey. In a nutshell AWESOME experience!!!!
