History:  My  passion for food began at age 15 when I worked as a kitchen hand in a Winnipeg Deli with my father. Eighteen years later I had the opportunity to work in cities around the world, Edinburgh, Belfast, Calgary, Melbourne and Auckland, just to name a few. I have also travelled extensively throughout Asia and Europe, on a mission to learn their regional cuisine, documenting my travels on film and creating an award winning web series entitled 'Without Borders' www.withoutborderschefs.com

How would you define your style?   

Asian influenced with traditional french techniques.

 

What is your feature flavour these days? 

Fresh lime juice

 

Obsessive compulsive about?  

Organisation, proper seasoning, tasting before serving...actually pretty much everything.

 

Your greatest culinary inspirations?

My mum

 

What do you love about this business?

It’s given me the chance to travel and work in different countries around the world.
