Spiced Air Fryer Tofu



Ingredients

1 brown onion, thinly sliced
2 bunches baby bok choy, coarsely chopped, stems and leaves separated
3 garlic cloves, finely chopped
1 tsp finely grated ginger
1/3 cup (80mL) teriyaki sauce

Air-fried tofu:

600 g firm tofu
1 Tbs cornflour
2 tsp onion powder
2 tsp garlic powder
1 tsp Chinese five spice

Serving suggestion:

Steamed jasmine rice
Teriyaki sauce, extra
Sliced red chilli
Toasted sesame seeds

Method

To make the air-fried tofu:

Fold a double layer of paper towel into quarters and place on a plate. Top with the tofu and a second layer of paper towel. Place a chopping board on top to weigh down the tofu. Set aside for 30 minutes to drain any excess moisture. Cut the tofu into 2 cm cubes.

Combine the cornflour, onion powder, garlic powder and Chinese five spice in a large bowl. Add tofu and toss to coat. Season generously.

Set the air fryer to 200 C. Add tofu in a single layer. Spray with oil. Cook, shaking basket halfway through, for 20 minutes or until lightly browned and crisp.

Meanwhile, heat the oil in a wok or large frying pan over high heat. Add the onion, bok choy stems, garlic and ginger. Stir-fry for 3 minutes or until vegetables are nearly tender. Add the teriyaki sauce and bok choy leaves. Stir-fry for 2 minutes or until the leaves wilt.

Serve air-fried tofu with bok choy mixture, steamed rice and extra teriyaki sauce. Sprinkle with chilli and sesame seeds.
