Republica Overview

You know the scene at Republica in St Kilda even if you haven’t been there; it's design and setup is testament to the cool chic Melbourne lifestyle that is all about keeping it fun, fresh and funky. Found in the Sea Baths complex and overlooking Port Phillip Bay this venue ticks all the right boxes; charismatic, perfect place for people watching and serving great food every night of the week. Republica is located in the St Kilda Sea Baths, right off St Kilda beach with views overlooking Port Phillip Bay. For your ultimate enjoyment and relaxation jump on the Number 96 and 16 trams which go past the venue.

INSPIRATION FROM THE KITCHEN
Ever since the oceans became the people's mode of transport, the spice trade has characterised the main routes of commerce throughout the world. Spices were used for food, currency, religion and medicine. It's no surprise spice has a huge influence in the gregarious share plate eating that is prevalent in the sea ports of all the spice routes in Asia, Europe, Africa and the America's. Their menu is designed to be a tribute to this food style, with drinks and music to match. Of course you can have a plate to yourself too. Catering for all tastes, budgets and palates the menu is sure to have something to entice you. Weekend breakfasts never sounded better with potted eggs with serrano ham, glazed onions, tomato & brioche, who could contemplate skipping breakfast with a dish like that?

There's plenty plenty more to choose from if you prefer something lighter or even bigger! Warm up with chicken coq au vin with parsnip cream, pancetta, mushrooms and cocktail onions for a filling and soul warming dinner. Chef Matt Dawson's Asian Inspired Seafood Tasting Plate for two is a culinary masterpeice of delicious flavours and textures. Sweet without being too overpowering is the meringue with poached pear and chocolate sauce, the perfect way to end your experience.

With such a diverse range of spaces, the options for functions are as diverse as the menu and drinks list. We can cater for Weddings,Hens,Birthdays,Engagement parties,Corporate events and anything in between.

OUR PLACE IS YOUR SPACE
The Republica Courtyard is ideal in sunshine and also has the options for weather protection and heating depending on the size of the function. It can be covered completely to provide an incredible atmosphere or left open for an amazing summer night. There is also many options for partial cover. Republica also has the Beach and Park areas for uninterrupted views of the beach and water. They are great for sunny afternoons, but demand good weather.

At Republica, dining inside can be used as an exclusive function area. This is the place for wine dinners, weddings, parties and conferences of all sorts. There is the smaller private dining room for intimate affairs.
