    Our team of chefs teach in a simple, approachable way, enabling you to create five delicious Thai dishes that you are invited to enjoy at the end of the class, with a refreshing glass of wine. Every class is highly informative, hands-on and limited to a maximum of 12 people. At the end of the lesson you’ll not only have learnt some exciting new skills, you’ll also receive the chef’s secret recipes, cooking notes and a signature Tamarind Apron to take home.

The Tamarind Restaurant Overview

Set in lush rainforest near Maleny in the Sunshine Coast Hinterland, The Tamarind Restaurant offers a distinctive taste of Thailand. Chef Daniel Jarrett is the force behind this award-winning restaurant, whose elegant pavilion design is perfect for soaking up the beautiful natural surrounds. Composed of a la carte, degustation and banquet selections, the ever-changing menu highlights the traditional Thai flavours of sweet, sour and spicy with style, skill and innovation. Expect dishes like fragrant red curry of Barramundi with ginger and lemongrass dumplings, Mooloolaba prawns, snake beans, pineapple and Thai basil. You will also find Massaman of slow cooked duck leg with roasted shallots, pickled ginger, peanuts and crispy fried shallots.

Freshly shucked oysters with chilli, finger lime, cucumber, pickled melon, crispy pigs ears and pork floss. Medium roasted beef, charred shallot sour cream, red dragon sauce, pinenut purée, pickled mushroom, kimchi, smoked oyster. Massaman of slow cooked duck leg, potato, roasted shallots, pickled ginger, peanuts and crispy fried shallots.

MEET OUR CHEF: Daniel Jarrett

Daniel Jarrett has 12 years of experience and his passion for food experience has taken him far and wide, from part of a large brigade in a well-known resort, to cooking in an intimate historical mountain restaurant. Coming to The Tamarind from his position as Head Chef at Ebb Waterfront Dining & Cellar, Daniel puts his passion in every dish in the hope that each guest takes away an unforgettable memory.

Daniels love of the clean flavours of Asian food and the healthy style of eating infuses everything he cooks. And while he creates contemporary Asian cuisine he also continues to offer traditional or classic Asian fare using traditional techniques. He also insists on using the best of regional produce and product to marry the harmony of tastes of sweet, sour, hot and salty. His passion for and knowledge of this wonderful cuisine is extensive and inspiring.

Why let the pleasure end with your meal? You can learn how to cook Thai like an expert at one of The Tamarind's cooking schools – but these do fill fast so pre-booking is essential! You can also relax after your delicious meal as The Tamarind is conveniently located on Spicers Tamarind Retreat & Spa, a luxurious retreat with 12 private villas, cedar hot tubs (5 only), in-room fireplaces, and an onsite day spa featuring 4 treatment room and a Hydro therapy room with spa, rain shower and steamroom.


Discover everything you ever wanted to know about this exciting cooking style, from where to find the right ingredients, to creating the perfect Thai curry, then savour every mouthful of your very own creation. Daniel's passion for this cuisine is infectious; his knowledge and understanding of ingredients, techniques and the balance of flavours are effectively conveyed through his relaxed and informal approach. Each intimate class of up to 12 includes 5 recipes plus lunch, wine, Tamarind Cooking School apron, and full recipes.
