Gourmet on the Go: All the Tips You Need to Transform Your Picnic from Basic to Boujee

By Marie-Antoinette Issa.

The 70s and 80s were a throwback to simpler times. Big hair, bigger shoulder pads and a basic approach to picnicking - where sizzling sausages and pillowy-soft, store-bought white bread rolls smeared with a spread of margarine sufficed for an outdoor feast.

However, today our tastes have since evolved. Now we not only showcase more creativity in our culinary endeavours in the kitchen but also pay closer attention to presentation when we dine outdoors. With platforms like Pinterest inspiring our aesthetic sensibilities to create spreads that look (almost) too good to eat!

A pioneer in the VIPicnic space is Sebastian Khouri - managing director of TLC Catering Sydney and a gourmet grub guru with more than a decade of experience in transforming simple spreads into something more sophisticated.

Whether you're orchestrating a cozy rendezvous, a wholesome family outing or a lively get-together with friends, Sebastian’s tips and tricks can upgrade your picnic from mundane to magnificent and effortlessly transform your alfresco dining experience into an extravagant artisan affair.

Lovely locations:

The first step to a VIPicnic experience is choosing the perfect location. Look for picturesque settings such as parks, beaches or scenic overlooks that offer stunning views and ample space to spread out.

Consider the time of day and weather conditions to ensure optimal comfort and enjoyment. Whether it's a shady spot under a tree or a sunny patch of grass, the right location sets the stage for a memorable picnic.

Set the scene:

Once you've selected your picnic spot, it's time to set the scene. Invest in a quality picnic blanket or outdoor rug to provide a comfortable seating area and define your space. Add decorative touches such as throw pillows, candles or fresh flowers to create an inviting ambience.

Consider bringing along a portable Bluetooth speaker to set the mood with your favourite tunes and, obviously, don't forget to pack a stylish picnic basket or hamper to transport your gourmet goodies in style.

"There are so many unique and wonderful options online for this,” says Sebastian. "Mini picnic benches where you can nicely hand and place your wine glass as you graze are also perfect for that literal touch of elevation.”

Gourmet grub:

The key to a fine dining-inspired picnic experience is the food. Instead of relying on pre-packaged snacks and sandwiches, opt for gourmet fare that tantalises the taste buds.

"I love artisanal cheeses, charcuterie, fresh fruit, gourmet snacks and decadent desserts,” says Sebastian. When possible I like to incorporate seasonal ingredients and local specialties for a true taste of the region,” he adds.

Pack your picnic basket with an assortment of savoury and sweet treats and don't forget to include beverages such as wine, Champagne or craft beers to toast your outdoor adventure.

"My insider tip here is to freeze some grapes and use them as ice cubes in your wine. They help keep your wine cold and also serve as a delicious treat once you’ve completed your drink.”

Pack like a pro:

Organisation is essential when it comes to packing for a picnic. Use insulated containers and cooler bags to keep perishable items fresh and beverages chilled. Pack food items in airtight containers to prevent spills and leaks and don't forget to bring along essentials such as plates, utensils, napkins and glassware.

"Also consider investing in eco-friendly picnic ware such as enamel plates which are light, easy to pack and practical (they won’t sog out and collapse, no matter how much you pack onto them); or reusable bamboo plates and utensils,” says Sebastian.

"Not only do they reduce waste and minimise environmental impact, but they look much prettier than their plastic counterparts.”

Embrace the power of presentation:

Presentation is key when it comes to elevating your picnic from basic to beautiful. Some of Sebastian’s tips include arranging your gourmet spread on decorative serving platters or cheese boards to create a visually stunning display.

Garnishing dishes with fresh herbs, edible flowers or fresh fruit to add a pop of colour and enhance the overall aesthetic, paying attention to detail and taking the time to arrange items neatly and thoughtfully.

"At the end of the day you want to make it special so using all these elements to aesthetically elevate your picnic platter is essential to creating that wow moment,” says Sebastian. "Remember to make it fun! Not only for looks but for taste!”

It’s ok to be a little bit extra:

The final step to enhancing your picnic experience is with thoughtful extras that add comfort and convenience.

"Pack sunscreen, insect repellent and hand sanitiser to stay comfortable and hygienic outdoors during the Summer and bring along cosy blankets or throws to stay warm on chilly evenings,” says Sebastian, who also recommends hosts bring along board games or sophisticated interactive activities like paint-and-Picasso-inspired art activities, for added entertainment.
