What better way to chill out than with a cocktail at your favourite bar or restaurant? Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Nestled in the heritage Georges Building on Collins Street, this modern Southeast Asian restaurant exudes elegant charm with bench seating in the main parlour inviting perching on a stool to linger over a cheeky cocktail, while cosy velvet booths are ideal for a romantic rendezvous with someone special.

Mixologist, Alex Gnyp serves up the Fire Dancer cocktail to set the scene for a good time as the ultimate kickstart to a fun night out with friends, while simultaneously being the ultimate companion to The George on Collins' modern Asian spread of dishes.

"The Fire Dance is one of our top three selling cocktails…and we sell a lot of cocktails,” he says.

"The cocktail got its name from the ancient art of fire dancing hundreds of years ago by the Maori people of New Zealand and has in time turned into a form of storytelling and dance, finding its way to Thailand in the 1980s.”

Alex says the heat and tropical flavours of this drink will transport you to the picturesque beaches of Phuket and Koh Samui.
