Enjoy relaxed dining a stone’s throw from the beach at Waves on Main Street in Merimbula. This newly opened restaurant is bright and sunny with full length glass windows allowing ocean views and a rustic coloured décor creating a casual, warm vibe, where guests can contemplate an ever-evolving Mod Oz menu with classical influences. Settle in for a culinary adventure with a starter of local rock oysters – natural or Rockefeller – before entrees such as seared veal tartare with anchovy, Melba toast and cured egg yolk ,teamed with a glass of Sauvignon Blanc from a select wine list. Delve into mains of Tinder Creek duck breast, pumpkin puree, root vegetables and Port sauce, before a divine sweet temptation like Winter spiced panna cotta, with poached pear and chocolate soil.

Superbe cuisine raffinée

Superb food innovation and sevice
We travel from Melbourne to Merimbula and have to go there. Wayne and his staff are attentive, authentic, and Wayne’s food is amazing.


Worthy of a Chef Hat
Waves Merimbula is just the restaurant that the area was looking for. Modern Australian cuisine. Chef Wayne Wager has really found his feet. Opening 2017, his menu continues to evolve. The perfectly cooked scallops, lamb, duck and eye fillet have never disappointed. The sides are fresh and desserts, wonderful. The panna cotta and chocolate mousse are lick the plate delicious, but my all time favourite is his cold rhubarb crumble ~ luscious art on a plate. I love that he offers such great value for a delightful three courses, all at chefs hat quality and all complimented by a boutique wine list. Waves is definitely worth your attention.


In a class of its own
There are some good places to eat around Merimbuls, but Waves is in a class of its own. Superb scallop entree, delicious eye fillet main and delightful ice cream in my affogato. Best meal in years.


The nicest food we have had in a long time. Beautifully cooked and presented. Very pleasant service and charming setting. Sensational restaurant. An absolute pleasure.


5 course to heaven
We had the 5 course with matching wine. Incredible food and incredible wine.


Have been several times. The service is impeccable the food is Devine. Seriously this is the best restaurant in Merimbula.


Fine Food
Really enjoyed several meals here that reflect thoughtfulness in how flavours complement each other. Love how the focus is on our local produce. Will continue to support regional fine dining. Shoes that we do not have to travel to major cities to enjoy!


Good but needs to improve
Didn’t book and got a table at a fine dining restaurant.!! Good “casual” restaurant as the chef/Owner describes it, he needs to have more faith in his food as the food was sensational and truly worthy of there award. Value was superb 3 courses for $65 and included everything on the menu very very good value. Good wine list and selection, a little bit of everything for everyone. Our complaints would be the colours don’t go at all horrible worn white walls with beautiful maroon doesn’t go, have all the one colour, and the service is nice enough but needs to be more attentive like make sure the guests have there drinks before they get there food would be a massive massive help. We will return and we will recommend this lovely little spot to friends and family all over.


Very nice ambiance, high quality food but not over the top, simple flavours but done very very well, Wine list could be better but has something for everyone. We will return, congratulations on winning your award after only 5 months.


2nd time we have dined
Dined here on Saturday night and yet again it was sea sensational, we were told from the start there was a couple of limitations on the menu due to it being a slow week and the chef didn’t want to over order (great product management) We both had the fish and were not disappointed, it was a pleasure to see them change it to “market fish” so the chef can change it up as much as he likes. We love coming here and will return again


Great time
Visited here on our weeks holiday last Tuesday and had a fantastic meal right from the start, escargot were superb and the salmon was out of this world. For Main we both had fish with the Pernod veloute amd was by far the best fish dish we have had in merimbula. The wine menu may be small but it has something for everyone and ticks all boxes the only thing it is missing (in my eyes) would be a vintage red wine. The service is ok the server who looked after us liked to talk and maybe is a little too much as we were there for the food experience, maybe have 1 experienced staff on with a less experienced one But all in all the experience was sensational and as for value for money the food here is actually cheaper then the the other “main” restaurants in town We will be back in the new year,


Perfection on a plate.
The food is exceptional, service outstanding, beautiful location in the middle of town. The Chef puts art on a plate with intricately balanced flavors and best of all, you don't leave feeling hungry or uncomfortably over full. The gentleman serving us was extremely professional and knew the answers to all our questions without having to run back to the kitchen to check. Will definitely be vising this gem of a restaurant again in the near future.


Awesome experience
The food was amazing, service was genuine. I had the steak and it just melted in my mouth. Wife had the fish with the best risotto I have ever had. Daughters had the scallops that were just perfect. I always thought you ether ate out for an Experience or a fuel up, I can honestly say this was both.


Relaxed with service
The preparation and presentation of the meal allowed the subtle flavours of the local produce to shine through. The wine suggestions of the staff further made for a very enjoyable night. Thank you


Beautifully balanced flavours with excellent service
It's always great to see a new chef braving the waters in a country town and Wayne has certainly kicked off his new venture with a bang. Waves looks to be an exciting addition to the Sapphire Coasts culinary attractions and if our first meal was a hint of things to come then I for one am looking forward to many more enjoyable meals from this excellent establishment. Our starter of citrus infused local oysters was delightful, the flavours complimenting the fresh tastes of the sea without overpowering the delicate morsels. All our mains were expertly balanced and the Wagyu steaks and lamb were cooked to perfection with just the right amount of delicious accompaniments to set them above the norm. Chocolate moose with chocolate dirt to die for and a small but beautifully chosen wine list left us very happy.


Glad it's reopened
Came here tonight with 2 others, The best fish I have cooked for me in years, perfect crust on the bottom and beautiful crusty skin. All 3 of us had a fantastic night and the wines to match were spot on. The best in town and on par with the old Zanzibar Cafe.


Dined here twice
Dined here on Wednesday night, We hadn't booked but we were able to get a table, and I'm glad we did from the moment we entered we were treated to first class service from the gentleman serving and what a character he was, The food was on another level to anything else in town, with having an allergy it's hard to find such a talented accomodating chef who went out of his way to cater for me. The steak was the best I have had in years and my partners lamb was beautiful, the price of the menu is fantastic for the high standards of food you get and it's that sort of place that as a couple if we spent $250 we wouldn't care because everything was perfect. Well done on your new venture and I'd be shocked if you did not win a Chef Hat award.
