A few words from Honour Brunswick Heads
Relaxed, European-style share plates and natural wines galore are the focus at Honour, in Byron Bay's
neighbouring seaside town of Brunswick Heads.
The eatery has become a firm fixture on the Bruns restaurant scene since Anna Mortimer and Aymeric
Albores took the reins late last year.
But this isn't your average restaurant, with both Anna and Aymeric boasting impressive resumes.
Brisbane born Anna trained as a chef in Paris, working at famed fine diners Septime and Verjus, before taking to
butchery in Melbourne at Andrew McConnell's Meatsmith. Honour serves a bounty of housemade goods
which Anna makes by hand; from capicola ham, to cured belly bacon, terrines and pates. The everchanging
menu here is heavily inspired by both her training and the abundant produce available in
the Northern Rivers.
"My time in France has undoubtedly coloured my approach to food. It's produce driven, stripped back and
usually requires bread for mopping. I learnt very quickly that you don't need to do much when the produce
is this good.
"We mix it up most weeks at Honour based on what's delicious and at its peak from the Mullumbimby
Farmers Market," says Anna of the process. "It can be a little daunting going from market to menu in a
few short hours but we like it that way. It gives us great freedom. We don't take ourselves too seriously.
We pour wine and plate up food that we want to enjoy ourselves."
"All our wines tell a story of people and place," he says. "We support small family producers that make
great wines, which are natural, biodynamic or organic. Right now you'll find us pouring refreshing wines
with character. We're loving Sete's Bomba, Hervé Villemade's Bovin and The Other Right's Stay Mellow.
"We have a solid wine list of mainly Australian, French and Italian wines and a blackboard by the glass
that rotates weekly. It's great to have the option of interesting or hard to find wines by the glass. We make
it accessible. And Champagne, there is always Champagne."
Honour Brunswick Heads is open from 5.00pm Friday & Saturday's. Bookings recomended.
