A simple, sophisticated interior in deep hues is furnished with pieces hand crafted from the recycled timbers of the old Seaport boardwalk, adding history to the stylishly refined decor. A paddock to plate philosophy ensures fresh Tasmanian produce is always on the menu alongside an offering of 25 gins from around the world and an extensive wine and whisky selection. Begin a feast with an entrée of eggplant and potato croquettes with Romesco crème fraiche; before delving into pan seared scallops, parsnip puree, confit parsnip and pancetta, or perhaps char-grilled skirt steak, wombok and chimichurri, washed down with a glass of Geronimo spiced red wine sangria.
