Roasted Bone Marrow with Chimichurri by Scott Gooding



Ingredients

8 – 12 beef bones w marrow cut into section or lengthways
2 Tbs olive oil
Sea salt
Black pepper
1/2 bunch fresh coriander
1/2 bunch fresh parsley
3-5 mint leaves
1 green chilli
5 Tbs olive oil
2 Tbs red wine vinegar
Sea salt
Black pepper

Method

Pre heat your oven to 220C.

Place your bones on a baking tray.

Drizzle with olive oil and season.

Thrown in the oven for 15 mins or until the bone begin to bubble.

Meanwhile thrown all the ingredients for the chimichurri in a blender.

Blitz for 20 secs or until fully combined and remove from the jug.
