Emu Kebabs

Ingredients

450 g emu top loin fillet
1 onion, chopped
1 inch fresh ginger root, grated
3 Tbs lemon juice
4 Tbs soy sauce
3 Tbs brown sugar
1 tsp sesame oil

Method

Mix together marinade ingredients.

Cut emu fillet into cubes. Marinade meat for 1 hour in refrigerator.

Thread meat onto bamboo skewers (previously soaked in water for 10 minutes).

Grill over hot coals, brushing with marinade, until done.
