With the Winter season upon us, the dropping temperature brings the promise of rich, hearty food that demands time to cook, time to eat and time to savour! Winter calls for indulgence in good food, good wine and good company.

What's in Season for June

June is also an opportune time to buy truffles and invite friends over for a thematic dinner, perhaps serving AGFG Resident Chef Shawn Sheather's recipe for gnocchi with caramelised pumpkin, pine nuts, goats cheese and shaved truffles, with a favourite bottle of red, beside a crackling fire.

In Australia, truffles form during the Summer, grow in size during Autumn and are harvested in Winter when they have matured. The majority of truffles grown in Australia are the French black or Perigord – grown in cooler areas.

Truffles are harvested manually after trained dogs detect the strong perfume they emit at maturity. Australia is now the fourth largest producer of truffles in the world and in 2018 about 12 tonnes were produced – most of which were exported, with about 3 tonnes consumed locally.
