Passing Clouds Winery Overview

Nestled in the beautiful countryside of Musk, just outside Daylesford, Passing Clouds Winery has been producing some of Australia’s most celebrated wines since 1974. Father and son winemakers Graeme and Cameron Leith embrace the age old traditions of Burgundy in harvesting and creating their wines, which are renowned for ageing beautifully – their gold medal winning 1980 Shiraz Cabernets in particular. Passing Clouds Winery’s award winning reds are considered exemplary and are complemented by highly acclaimed Sauvignon Blanc, Grenache and Chardonnay. THE JOB OF WINEMAKER is to allow the fruit and terroir of the vineyards to express itself. Graeme and Cameron both enthusiastically embrace the traditions of Burgundy and uphold them as much as possible. Through the use of age old techniques (with the aid of some modern equipment), they guide the fruit from vineyard to bottle as gently as possible.

As Graeme says, winemaking is not all that dissimilar to making a fruit cake; ‘good ingredients, a guiding hand and get the timing right'. He also says that winemaking is 20% winemaking, 80% cleaning up!
Ferments are conducted in open stainless steel fermenters, where they are hand plunged until such time as they are deemed ready to be pressed.
The traditional Shiraz Cabernet, Graeme's Blend, is matured in 60% fine grained American oak, 40% French. Everything else in high quality, fine grained French oak. Malo-lactic fermentation occurs naturally in spring creating wines with softer acid and more complexity.
All of the reds are of exemplary quality and have the power to age gracefully. Indeed the 1980 Shiraz Cabernets are still drinking beautifully.
Graeme Leith has been the winemaker ever since the first vintage, now lost in the mists of time.

As Cameron (Graeme's son) takes over the winemaking he is upholding these philosophies, tradition is an important part of a winery such as Passing Clouds. Modern theories are being used (sparingly) – particularly with the higher percentages of Chardonnay and Pinot from Daylesford. Cameron is having success with some new approaches in the winery, such as barrel fermenting Pinot, the use of as many whole berries/bunches as possible and carbonic maceration.

Passing Clouds are still making traditional reds, but the emphasis has shifted to the cool climate Pinots and Chardonnays. Graeme has made many medal winning Pinots over the years and they expect Cameron will carry on the tradition, whilst putting his own stamp on what promises to be some exciting vintages in the near future.
